What does "low acid" coffee mean?
Acidity refers to both the chemistry and taste of coffee. Certain coffees grown in higher elevation have a higher natural ph and result in a acidy type taste. Lower grown coffees do not and in every case, hi or low, the specific harvest can be a bit different. Roasting coffee dark changes the ph and the taste to reduce acidity so in our coffees, we try to roast the more acis beans to a darker profile to reduce the acid. For lighter roasts, we use blends and beans that are naturally less acid. The best way to characterize it is to say that we are always roasting and blending to create a lower acid profile.
